Wikipedia defines “raw foodism” as “a lifestyle promoting the consumption of uncooked, unprocessed and often organic foods as a large percentage of the diet”. Raw foodists believe that cooking food breaks down natural enzymes and proteins to a non nutritive level. Raw or “living foods” contain little or no sodium, saturated or trans fats yet are high in fiber and potassium.
Generally a raw food diet will consist of over 75% raw food and not just fruit, nuts and vegetables either but can include unpasteurized dairy (like raw milk, cheese, eggs and yogurt) as well as raw fish and raw meat.
The benefits of the Raw Food Diet are claimed to be a raise in energy levels, better digestion, skin improvements and lowered risk of heart disease. There are many sources of information both on-line and in books about raw foodism; there is even a raw food movement dealing with some of the criticism and controversy surrounding the pros and cons of adhering to such a diet lifestyle.
