1. Make the marinade: in a large bowl, combine the orange and lime juices, sherry or apple juice, garlic, cilantro, chilie powder, paprika, cumin, and salt and pepper to taste. Turn the steak in the marinade, cover, and leave to marinade in the refrigerator overnight. 2. Make the Slasa Fresca: in a bowl, combine the tomatoes, radishes, scallions, chilies, cilantro lime juice, ans salt to taste. Cover and leave in tehe refrigerator until ready to serve. 3. Remove the steak from the marinade amd pat dry. Put the steak under the broiler, 3-4 in from the heat, and broil fro 3 minutes on each side for rare steak, 4 minutes for medium steak, or 5-6 for well-done steak. Cover with foil and leave to stand for 5 minutes. 4. Meanwhile, warm the tortillas. 5. Slice the steak, arrange on serving plates, and sprinkle with cilantro. Serve with tortillas, salsa fresca, diced avocado, and sour cream. |
