I'm really not a "diary-keeping" person, never have been, even in my youth. That said, I can see how it may be beneficial for tracking weight loss habits. What is a good alternative if a diary is something I just know I won't stay committed to?

Have you thought about getting a fitness tracker? These gadgets often come with companion apps that are easy to use and have lots of additional features if you want to track weight, calories, feelings and even right down to tracking your ovulation or period cycle (if you're a woman who wants to do that). I think that might be a good alternative if you don't want to physically journal everything.
