  • Who Else is in love with oven roasting fall vegetables?

    I am completely hooked on oven roasting vegetables right now. Fall veggies are perfect for this and I can't get enough of them. Carrots, brussel sprouts, squash. It's all perfect! Such an easy way to prepare the foods and a great way to get tons of veggies into my diet. Squash reheats really well, so if you've already got the oven on, throw a squash (cut in half) into the oven for a later meal that you can microwave. Squash seeds toast up nicely for an extra high-fiber snack, too.

    Me! Love it! plus baked potato, broccoli and cauliflower. So good and cheap but it seems fancy.

      Is it good, but I recommend eating fresh (live) vegetables as much as possible in order to benefit from them as it should, even energetically

        Just tried parsnips roasted. They're weird tasting. Are they supposed to be weird tasting? Like you can taste them in your nose?

          right here! Love roasting veggies. I don't like parsnips, but I do like beets. It's a pain to peel them but if you roast them first, the skins come off easier.
