  • Embrace the season!

    I just got back from grocery shopping and I had such a good time! I couldn’t believe how many local foods were available at my regular supermarket. I always forget how fun this time of year can be. This year, I’m determined to use more root veggies and squash in my cooking throughout the fall. I just got a bag of beets, a butternut squash, and a bag of onions. I chopped some of them up and added regular potatoes to the mix and just fried them up in a touch of olive oil until they were soft and just slightly caramelized. OMG they were SO good. I can’t wait to go back tomorrow and get more things to try. It’s so easy but it comes out really colorful and tasty and takes barely any effort to make.

    I know what you mean. I am finding that the produce section of the grocery store is so appealing right now. Everything is actually fresh and bright and beautiful looking instead of just hanging in there. It's such a thrill to feel like the regular supermarket is acting like a farmer's market, just for a bit.

      I wish that I could but I don't really know how to cook squash and all of those harvest foods from the fall other than just boiling them and mashing them up and I don't really want that every night.

        Have you ever heard of spaghetti squash? I have just tried it for the first time and I filled it with extra lean ground beef, light mozarella cheese, and tomato sauce as though it was sort of a lasagna. very good.

          That sounds really delicious and I've never even heard of it. Do you just bake it inside? Does the spagetti squash somehow come out like noodles or something?

              I just ran into a kind of speed bump when it comes to embracing the season and eating what is local and ripe etc. It just snowed here for the first time this year and I have to say, I don’t think that there is going to be anything else fresh coming off of the farm fields. I think that it’s going to be a matter of eating imported foods over the next little while, if only from other states that are still hundreds and hundreds of miles away!
