What is a good diet for a new mom to follow who wants to lose the pounds but one that is also safe for a baby if she's breastfeeding?

I would say Mediterranean. It's not extreme and doesn't require you to take a bunch of supplements or anything like that. It just teaches your healthy eating habits, so I would think that would be safe for a baby.
That said, if you're someone who does better following a strict plan, then this diet wouldn't be for you. I'd recommend seeing what your doctor thinks if you're worried about your diet effecting your baby.
