I know that it's not a good idea to go extreme or drastic for a diet becuase it means it won't be kept up, but I feel like I need to make a lot of changes. Essentially an overhaul. Is it really pointless to try?

Add one positive change per week. Start with adding a salad before every dinner. Do that for a week, then come up with another positive change like swapping in multigrain pasta instead of white pasta. Keep doing it. It means that over time, you'll only get better and better.
