Festive for Halloween & Thanksgiving!
This lovely autumn recipe I got from weight watchers.

1 Tbsp vegetable oil
1 medium onion(s), chopped
1 medium apple(s), chopped
1 small carrot(s), chopped
2 tsp ginger root, grated
3 3/4 cup(s) pumpkin (raw 1-inch cubes), deseeded and chopped
3 1/2 cup(s) broth, any type
1/4 tsp ground nutmeg, or all spice
1/8 tsp black pepper, freshly ground
1/8 tsp table salt
1 tsp parsley, chopped, to garnish
* Heat the vegetable oil in a large saucepan and sauté the onion, apple and carrot for 3 - 4 minutes, until softened. Add the ginger and stir well.
* Add the pumpkin (or butternut squash) and stock to the saucepan. Bring to the boil, then simmer gently without a lid for 20 minutes, until the vegetables are tender.
* Transfer the soup to a blender or food processor and blend for 15 seconds, or until smooth. Return to the saucepan, reheat and season to taste with allspice or nutmeg, salt and pepper. Serve, sprinkled with chopped fresh herbs.
