I would like to share with you my favorite low caloric Wild Mushroom Tarts. It's delicious and easy to prepare plus you do not have to be guilty if you eat some more. You can even prepare it for this Christmas season. Enjoy!
* 375g block all-butter puff pastry
* flour , for dusting
* 25g butter
* 300g mixed wild mushrooms or just one type, cleaned and sliced
* 25g Parmesan (or vegetarian alternative), finely grated
* small handful parsley leaves, chopped
* 1 garlic clove , finely chopped
* 1 egg , beaten
1. Roll the pastry out on a floured surface and cut out small circles as desired, make it about 15cm in diameter. Leave to chill on a lined baking tray, put it in the fridge while you work with the fillings.
2. Heat oven to 200C/fan . Heat a large frying pan until hot, and then add the butter and fry the mushrooms for 5 minutes or until there is no liquid left in the pan. Season as desired. After, take off the heat and mix the mushrooms with Parmesan, parsley and garlic.
3. Make a 1cm border around the edge of each tart, then spoon the mushrooms into the center of the circle. Brush the edge with beaten egg, and then bake the tarts for 20-30 minutes until it puffed up and is golden in color. You may now serve it to the guests.
