This past week I was held up with a cold and ate soup for most of my meals. To my great surprise, despite the fact that I didn't exercise, I was down 4 lbs at the end of the week. So soup is my new weight loss friend.
I made a delicious broccoli and kale soup the other night and I wanted to share the recipe.
1 tablespoon olive oil
1 medium onion, chopped
2 pounds broccoli, cut into 2 inch pieces
2 tsp dried thyme
5 cups low-sodium chicken broth
2 cups chopped kale
Add the olive oil to a large pot and saute onions until translucent. Add the broccoli and thyme and saute for 5 minutes. Pour in the chicken broth, bring to a boil and then simmer for 10 minutes. Add the kale and simmer for 5 more minutes.
Pour the mixture into a blender and blend until smooth. Reheat blended soup in a pot if necessary. Salt to taste.
This recipe makes a ton of delicious and healthy broccoli soup that is amazingly creamy, but without the cream. Add a dollop of fat-free sour cream if you desire for some extra creaminess and added calcium.
Makes approx. 6 (1 cup) servings. 95 calories per serving. Enjoy!
