I'm looking for lunch ideas that are both high fiber and high protein. I would preferably like something that is easy to make, that is tasty and that I can make in advance. Does something like this exist or is this just wishful thinking on my part?

Sure! There are lots of high protein and high fiber foods. One of the easiest to make the night before is a salad with lots of veggies and a bit of feta and some tree nuts. That's some great protein and fiber right there. You can make a pot of vegetable chicken soup in advance, too. Those are just a couple of ideas off the top of my head to help you get the ball rolling!
