    What are some healthy squash recipes that are both tasty and won't poof out my waistline. Squash is really on sale where I live because it's that time of year. I'm looking for something other than just baking it in the oven. All creative ideas welcome!

    My favorite is spaghetti squash with vegetables in a bit of olive oil and a sprinkle of parmesan or feta.

      butternut squash soup is one of my favorites! Honestly, you can make lots of really nice tasting squash soups and freeze them and enjoy them all winter long. :)

        Have you ever tried making fries out of it? I don't mean like in a deep frier or anything, but baking them in the oven? They taste great!

          I've heard of sweet potato fries, but not fries made out of squash. What squash would you recommend. I imagine you can't do this with just any squash.

            Rutabega...I think that's a squash, it s a good one. Probably butternut and acorn would be good. Essentially anything that's not spaghetti squash cause it's stringy.

              I think routabega is a root vegetable so it's not the same thing as a squash. That said, it does make good fries. Other great veggies fries include beets, turnip and parsnip
