I want to start using beets in my everyday cooking. I have read about how fantastic they are as a superfood and boosting my nutrition has become very important to me recently. The problem is that other than serving them as a side, from a can, or making borsht, I don’t really know what to do with them. I don’t want to just microwave them or make borscht all the time. Does anyone know how to use beets in recipes that are fast enough that I will be motivated to use them, and that is healthy overall? I mean, as tasty as deep fried beets could possibly be, that’s not what I’m looking for. I want to enhance nutrition, not kill it haha. Thanks!

I used to hate beets when I was a kid but they really do seem to grow on you. Plus, when you don't limit yourself to just eating canned or pickled beets just as they are, you can learn to like them a lot more.
I've recently started to peel them, chop them, and toss them in a pan. I cook them for a bit and then add the rest of the veggies that I would add to a stir fry. It adds a lot of color and nutrition and they're substantial so they fill you up a bit more than many other things.
