Tomatoes and Zucchini

I've planted a lot of tomatoes and zucchini and before long I'll have lots of ripe fresh foods to eat, but I realized that I have no idea what to do with them all. I mean, I will definitely give some to family and friends, but I'll still have lots to eat. Does anyone know of any great recipes involving this fruit and vegetable? I want to do more with them than just make a sandwich, salad or throw them in a pasta dish. The more unique the recipe the happier I'll be :D

Well, if you are actually going to have a lot of tomatoes, have you thought about making your own tomato sauce or salsa and freezing it? As for Zucchini, if you have a spiralizer you can transform it into veggie pasta which is also a great dinner. You can also make zucchini soups or purees and freeze those, as well as zucchini bread (this tastes awesome).

I really feel like bigbobby covered all the main ones. Essentially the best thing to do is to be creative and look up some recipes online. There are many ways that you can cook with tomatoes and zucchini and you can also eat both of them raw, too. Both tomatoes and Zucchini are highly versatile foods. Have fun and, yeah, if you grow too much, you can always unload it on friends, family and neighbors haha.

Thanks. Those are a lot of great recipe suggestions and good food ideas. I'll definitely put them to good use. I also forget entirely about making stuff and freezing it for later. Hahaha and don't worry madscientist , I full intend to be giving away a lot of it to friends, family and whoever wants to take it. It's been a really hot summer here so there's been perfect growing conditions for it.
