    Is there any way to cook eggplant so that it tastes great but that it doesn't have to absorb a lot of oil?

    Have you considered breading it with egg whites and bread crumbs? If you then bake it on a nonstick pan, it’s very good. I take a low fat mozz and melt that over the top with a bit of home made spaghetti sauce and it’s excellent.
