  • Most nutrition out of vegetables

What is the most nutritious way to eat vegetables? Boiling? Baking? Frying in olive oil? I really am trying to get the most out of the healthiest foods that I eat.

Eating them raw and as fresh as possible would be the most nutritious way, I think. That said, if you have to cook them baking is good as is boiling them as long as you also ingest the water in which you boiled them. When you boil vegetables, a lot of their nutrients goes into the water (notice how when you boil carrots the water is slightly orange tinged after? Don't throw that goodness away or you're wiping out half the nutrients!

They're also healthy to eat if you fry them, especially if you use a little bit of a healthy oil like coconut or olive. Just down drown the veggies in oil and you'll be fine. Pretty much, as long as you're eating them as fresh as possible, you're good...that and you know, just eating them is kind of the important part anyway. You'll always get some benefit out of them. :)

Essentially, you don't want to boil all the nutrients out of them (unless you're having the broth too)
Don't deep fry or cook them in too much oil
don't charcoal them on the BBQ
And make sure the vegetables you're cooking are as fresh as possible. If they've been sitting in your fridge for a week they are not going to be as nutritious as ones you just bought or even frozen vegetables.

This is very true. I actually buy more frozen vegetables than fresh, especially during times of the year when I know some of the vegetables and fruits on the shelves aren't grown locally. The longer something takes to get to its destination, the less nutrition it has.

Honestly, I would worry less about what' the most nutritious way to eat them and just focus on eating them period. Most of us don't eat the recommended amount of vegetables in a day anyway. I'm not saying start making a habit of eating deep fried vegetables...seriously deep-friend anything is fast food and bad for you...but whether it's grilled, fried, baked or boiled, just eat them.

LOL I guess you've got a point there hahaha. Just eat it any way as long as it's not deep-fried. Got it LOL

That said, thanks to everyone else for your thoughts. It was very helpful :D
