  • Diet friendly lunches

    Hi everyone! I pack a lunch to bring to work with me every day, but it’s not a task that I enjoy. I always fall into the trap of using prepackaged foods and those are always bad for my diet (or health for that matter).

    Does anyone have any suggestions for diet-friendly foods that don’t take too long to prepare and that don’t cost a fortune?

    I don’t have any allergies that I know of and I am not a vegetarian or have any special dietary needs like that. I just want to lose weight!

    Instead of trying to come up with meals specific for your lunches, just cook a little bit more of your dinner the night before. You can then use the "leftovers" as a lunch portion and you don't have to spend any more time prepping. In fact, if you make a lot more of the dinner, you can freeze some of the portions so that you can use them later in the week or month. I usually have quite a few frozen lunch options in my freezer so that I have a choice each day.

      Lunch ideas

      Choose from the following: a wholemeal sandwich made with 115g portion chicken, lean beef or ham, tuna in spring water, 55g reduce fat cheese or 40 g low-fat Cheddar cheese or 2 grilled vegetable and lean meat or chicken burgers in bun or a small jacket potato with one chopped boiled egg or 115g tuna in spring water, dressed with 1 teaspoon of low calorie mayonnaise. Fresh fruit or diet yoghurt to follow.

        I've been into couscous lately. I cook it with some low fat, low sodium chicken stock (it only takes a few minutes and it's even easier to cook than rice). I toss in steamed veggies such as bell peppers, green beans, and other things I like and then cut up a tomato and throw that in, too. When all is said and done, it can all be brought in a single plastic container (so there isn't a lot of dishes to do when you get home). It's very flavorful, very satisfying, and it's fast and easy.
