1/2 cup Low-fat Margarine 1/2 cup Flour 1 1/2 tsp Salt 1/4 tsp Pepper 3 cups Skim Milk
3 cups Lean Cooked ham, cubed 1 large Green pepper 1 large Onion 1/2 cup Light Cheddar cheese, shredded 5 cups Potatoes, pared, sliced
Preparation:
Melt margarine in large saucepan over Low heat. Blend in flour, salt and pepper. Remove from heat. Add milk. Cook until thick. Fold in ham, green pepper, onion and cheese. Pour over potatoes in 13x9" pan. Cover with foil. Bake at 350 F. for 30 minutes. Uncover and bake for one hour more until brown and bubbly. Let stand for 10 minutes before serving.
